Menu of the week
It looks that there are some people out there on the same Paleo journey. I was talking to my chiropractor yesterday and he started to try to convert me. When he saw I was on board, he was even more excited! Some have asked the menu of this week. Here you go then 🙂
Monday: Rosemary and lemon whole chicken cooked in the crock pot with a side of Greek salad (Lettuce, tomatoes, kalamata olives, cucumber with avo-ziki dressing). Avo-ziki dressing: 1 ripe avocado, ¼ cup grated cucumber, 1 small clove garlic (grated), juice of 1 lemon, 2 tbsp. olive oil, sea salt and pepper, 1 tsp. fresh dill. Put everything in the blender and voila!
Tuesday: Chicken breast in oven layered with tomatoes, avocados, and salt and pepper with a side of Brussels sprouts.
Wednesday: Spaghetti squash with ground chicken, peppers, asparagus, onions, and garlic.
Thursday: Cumin spiced pork tenderloin with some left over vegetables.
Friday: Chorizo meatballs (beef, apple cider vinegar, chipotle powder, smoked paprika, onion powder, garlic powder, salt and pepper) with mashed cauliflower.
Bonus of the week: I’ll probably make a lemon loaf tomorrow (Grain, sugar, and dairy free… yes, it is possible!) Wonder how… ask me how 🙂
